Mushroom-Scallion Soup

A creamy mushroom and scallion soup, pureed for a silky texture and garnished with fresh green onions.
Ingredients
- 4 tablespoons (½ stick) butter
- 3 bunches green onions (about 12 ounces)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 12 ounces mushrooms, thinly sliced
- 2 tablespoons all-purpose flour
- 1 4 cups Poultry Stock, Chicken Broth, or Mushroom Stock (opens in new tab)
- ½ cup heavy cream

Gather these ingredients - no prep needed yet.
- 4 tablespoons (½ stick) butter
- 3 bunches green onions (about 12 ounces)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 12 ounces mushrooms, thinly sliced
- 2 tablespoons all-purpose flour
- 1 4 cups Poultry Stock, Chicken Broth, or Mushroom Stock
- ½ cup heavy cream
Let's Cook

Step 1.
Melt in a medium saucepan over medium heat: 4 tablespoons (½ stick) butter

Finely chop: 3 bunches green onions (about 12 ounces)

Reserve ½ cup of the chopped green onions for garnish. Add the rest to the pan along with: 1 teaspoon salt; ½ teaspoon black pepper

Cook, stirring occasionally, until the green onions are softened, about 6 minutes. Stir in: 12 ounces mushrooms, thinly sliced

Cook until the mushrooms release their juices, about 4 minutes. Add: 2 tablespoons all-purpose flour

Cook, stirring, for 1 minute. Slowly add while stirring: 4 cups Poultry Stock, Chicken Broth, or Mushroom Stock

Step 7.
Bring to a boil, then reduce to a simmer, cover, and cook for 10 minutes. Transfer half of the soup to a blender and puree until silky smooth. Pour it back into the pan. Remove the pot from the heat and stir in: ½ cup heavy cream

Taste and add seasoning if needed. Ladle the soup into warmed bowls. Top each bowl with the reserved chopped green onions.
