Mozzarella En Carrozza
Crispy air-fried mozzarella sandwiches with a tangy tomato-caper vinaigrette. A quick and easy Italian-inspired snack or appetizer.
Ingredients
- 1 plum tomato seeded and chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh basil chopped
- 1 tbsp capers drained and chopped
- 1 tsp lemon juice

- 1/4 lbs fresh mozzarella cheese sliced
- 4 firm white bread crusts trimmed
- 1 egg
- 2 tbsp all-purpose flour
- 1/2 cup panko breadcrumbs
- 3 tbsp grated Parmesan cheese
- Olive oil in mister

- 1 tsp lemon juice
- Kosher salt
- 1 egg
- 2 tbsp all-purpose flour
- 1/2 cup panko breadcrumbs
- 3 tbsp grated Parmesan cheese
- Olive oil in mister
Prepare
- 1 plum tomato, seeded and chopped
- Chop 1 tbsp fresh basil
- 1 tbsp capers, drained and chopped
- Slice 1/4 lbs fresh mozzarella cheese
- 4 firm white bread, crusts trimmed

Step 1.
In a small bowl, combine the chopped plum tomato, 2 tablespoons extra virgin olive oil, chopped fresh basil, drained and chopped capers, lemon juice, and ⅛ teaspoon kosher salt. Stir to mix, then set the tomato dressing aside.

Step 2.
Place the sliced fresh mozzarella between 4 slices of firm white bread (crusts trimmed) to make 2 sandwiches. Cut each sandwich in half diagonally to form 4 triangles.

In a shallow dish, beat 1 egg. In a second shallow dish, mix 2 tablespoons all-purpose flour with ¼ teaspoon kosher salt. In a third shallow dish, combine ½ cup panko breadcrumbs with 3 tablespoons grated Parmesan cheese.

Dip each sandwich triangle, one at a time, into the flour mixture, coating all sides. Shake off excess flour. Then dip into the beaten egg, allowing excess to drip off. Finally, coat in the panko-Parmesan mixture, pressing gently so the crumbs adhere.

Preheat the air fryer to 390°F. Lightly spray the air fryer basket with olive oil. Spray the breaded sandwiches on all sides with olive oil from a mister, then arrange them in a single layer in the basket. Air fry for 5 minutes, turning once with tongs, until crisp and golden brown.

Remove the sandwiches from the air fryer and cut each in half to make 8 small triangles. Serve immediately while hot, with the reserved tomato vinaigrette on the side.
