Mom’s Rice Pudding

Step 1.
In a medium saucepan over medium heat, combine 1½ cups of the half-and-half with the cooked rice and 2 tablespoons unsalted butter. Stir occasionally and let it simmer for 15 minutes, until the rice is tender and the mixture thickens slightly.

While the rice mixture simmers, in a medium bowl, whisk together the remaining ½ cup half-and-half, 1 egg, ⅓ cup granulated sugar, 2 teaspoons vanilla extract, ½ teaspoon ground cinnamon, ½ teaspoon kosher salt, and ¼ teaspoon ground nutmeg until well combined and smooth.

After the rice mixture has cooked for 15 minutes, pour in the egg mixture and ¼ cup raisins. Stir constantly and cook over medium heat for 5 minutes, until the pudding thickens and coats the back of a spoon. Turn off the heat and stir once more. Serve warm or chilled.
