Please read About Buttercream. 3 to 3 ½ cups This egg white buttercream does not require a cooked syrup. Have the butter and egg whites at room temperature, 68° to 70°F.

  • 2 tablespoons water
  • ¼ teaspoon cream of tartar
  • 1 teaspoon vanilla

    Sub-recipe steps
    1. Stir in a small heavy saucepan until the sugar is dissolved, then bring to a boil over high heat: 1 cup sugar; ½ cup water
    2. In the meantime, beat in large bowl, or in a stand mixer with the whisk attachment, at medium-high speed until nearly stiff: 4 large egg whites (about ½ cup); ⅛ teaspoon cream of tartar or ½ teaspoon lemon juice
    3. When the egg whites are nearly stiff, turn the mixer down to the lowest speed and continue to beat while the syrup cooks.
    4. When the syrup has reached a boil, turn the heat down to medium-low, cover the pan, and simmer for 1 minute to allow the steam to wash down any crystals that may have formed on the sides of the pan. Uncover and brush the sides of the pan with a wet pastry brush. Cook the syrup until a thermometer reads 238° to 240°F, the soft-ball stage. Beating the whites at high speed, add the syrup in a slow, thin stream down the side of the bowl. Avoid pouring the hot syrup onto the spinning whisk. Continue to beat for 10 minutes, or until the bowl of the mixer is no longer warm. Use as directed in individual recipes.

Let's Cook

  1. Step 1.

    Have ready: 3 sticks (12 ounces) unsalted butter, softened

  2. Step 2.

    Whisk together in a large stainless steel bowl or the bowl of a stand mixer: 4 large egg whites; ¾ cup sugar; 2 tablespoons water; ¼ teaspoon cream of tartar

  3. Step 3.

    Set the bowl in a deep skillet filled with about 1 inch of simmering water. Make sure the water level is at least as high as the depth of the egg whites in the bowl. Beat the whites constantly on low speed with a hand mixer or a whisk until the mixture reaches 160°F on an instant-read thermometer. Do not stop beating while the bowl is in the skillet, or the egg whites will overcook. If you cannot hold the thermometer in the egg whites while continuing to beat, remove the bowl from the skillet just to read the thermometer, then immediately return the bowl to the skillet. Remove the bowl from the skillet and add: 1 teaspoon vanilla

  4. Step 4.

    If using a stand mixer, attach the bowl to the mixer and use the whisk attachment to beat on high speed until thick, glossy, and stiff. Continue to beat until the bottom of the bowl is no longer warm, about 10 minutes. Switch to the paddle attachment and beat in the softened butter a couple of tablespoons at a time, waiting until each addition is fully incorporated before adding the next. Beat until smooth. This keeps, refrigerated, for up to 6 days; or freeze for up to 6 months. Soften as for French Buttercream.

    We find this buttercream, made with a cooked sugar syrup, to be slightly easier than Swiss meringue buttercream. If the frosting looks broken, don’t panic. Just keep beating until smooth.

    When the bowl of the mixer is no longer warm, beat in the softened butter about a tablespoon at a time until the frosting is very smooth and creamy.
