Melted Leeks
4 servings A delectable side dish that also makes a fine topping for pizza or crostini, or use as you would Caramelized Onions.
Ingredients
- 2½ tablespoons butter
- 3 large leeks, trimmed, halved lengthwise, well cleaned, and thinly sliced
- 1 cup chicken or vegetable stock or broth or 1 cup water
- ¼ teaspoon salt
- 1 sprig fresh thyme or ¼ teaspoon dried thyme
- ¼ cup dry white wine
- 2 tablespoons heavy cream
- (½ teaspoon curry powder or a pinch of grated or ground nutmeg)
- Salt and black pepper
- (Minced chives or chopped parsley)

Step 1.
Melt in a large skillet over medium-low heat: 2½ tablespoons butter

Add and cook until starting to soften, 4 to 5 minutes: 3 large leeks, trimmed, halved lengthwise, well cleaned, and thinly sliced

Add: 1 cup chicken or vegetable stock or broth or 1 cup water; ¼ teaspoon salt; 1 sprig fresh thyme or ¼ teaspoon dried thyme

Step 4.
Cover and simmer until the leeks are tender, about 5 minutes. Uncover, increase the heat to medium-high, and add: ¼ cup dry white wine

Step 5.
Boil until the liquid is reduced by half, 10 to 15 minutes. Stir in: 2 tablespoons heavy cream; (½ teaspoon curry powder or a pinch of grated or ground nutmeg)

Cook until the cream is absorbed. Discard the thyme sprig, if using, and season to taste with: Salt and black pepper
