  • 3 tablespoons orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons sugar
  • 3 pounds melon, such as cantaloupe, honeydew, or Crenshaw

Gather these ingredients - no prep needed yet.

  • 1 pound ripe prickly pears (about 6)
  • 3 tablespoons orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons sugar
  • 3 pounds melon, such as cantaloupe, honeydew, or Crenshaw

Let's Cook

  1. Step 1.

    Wearing gloves, peel as directed above: 1 pound ripe prickly pears (about 6)

  2. Step 2.

    Cut into 1-inch chunks and transfer to a food processor or blender along with: 3 tablespoons orange juice; 2 tablespoons lime juice; 2 tablespoons sugar

  3. Step 3.

    Puree until smooth. Taste and, if desired, add more lime or orange juice. Transfer to a bowl, cover, and chill at least 1 hour. Halve, seed, cut into wedges, and remove the rinds from: 3 pounds melon, such as cantaloupe, honeydew, or Crenshaw

  4. Step 4.

    Set a melon wedge on each plate and spoon a ribbon of sauce over it.
