Mashed sweet potatoes are a comforting side dish, sweetened with pineapple, pecans, and warm spices, and enriched with butter and cream.
Ingredients
- 2 pounds sweet potatoes, scrubbed
- 4 tablespoons butter, softened, or to taste
- Salt to taste
- Warm heavy cream or orange juice
- ½ cup chopped pineapple, or to taste
- ½ cup chopped pecans or ¼ cup chopped black walnuts, toasted
- 3 tablespoons diced candied ginger or ½ teaspoon ground ginger
- 2 tablespoons brown sugar
- 1 tablespoon bourbon or dry sherry
- 1 teaspoon finely grated orange or lemon zest
- Pinch of ground cloves or ½ teaspoon ground cinnamon

Step 1.
Boil or bake, above, until thoroughly tender: 2 pounds sweet potatoes, scrubbed

Let stand until cool enough to handle. Remove the skins, then mash, rice, or put through a food mill into a bowl. Add: 4 tablespoons butter, softened, or to taste; Salt to taste

Thin with: Warm heavy cream or orange juice

Beat the potatoes with a fork, whisk, or electric mixer until light. Serve immediately, or reheat at serving time at 375°F in a buttered baking dish.
