Mashed sweet potatoes are a comforting side dish, sweetened with pineapple, pecans, and warm spices, and enriched with butter and cream.

Ingredients

  • 2 pounds sweet potatoes, scrubbed
  • 4 tablespoons butter, softened, or to taste
  • Salt to taste
  • Warm heavy cream or orange juice
  • ½ cup chopped pineapple, or to taste
  • ½ cup chopped pecans or ¼ cup chopped black walnuts, toasted
  • 3 tablespoons diced candied ginger or ½ teaspoon ground ginger
  • 2 tablespoons brown sugar
  • 1 tablespoon bourbon or dry sherry
  • 1 teaspoon finely grated orange or lemon zest
  • Pinch of ground cloves or ½ teaspoon ground cinnamon

  • 4 tablespoons butter, softened, or to taste
  • Salt to taste

Let's Cook

  1. Step 1.

    Boil or bake, above, until thoroughly tender: 2 pounds sweet potatoes, scrubbed

  2. Step 2.

    Let stand until cool enough to handle. Remove the skins, then mash, rice, or put through a food mill into a bowl. Add: 4 tablespoons butter, softened, or to taste; Salt to taste

  3. Step 3.

    Thin with: Warm heavy cream or orange juice

For a sweeter dish, season with any of the following: ½ cup chopped pineapple, or to taste; ½ cup chopped pecans or ¼ cup chopped black walnuts, toasted; 3 tablespoons diced candied ginger or ½ teaspoon ground ginger; 2 tablespoons brown sugar; 1 tablespoon bourbon or dry sherry; 1 teaspoon finely grated orange or lemon zest; Pinch of ground cloves or ½ teaspoon ground cinnamon

  5. Step 5.

    Beat the potatoes with a fork, whisk, or electric mixer until light. Serve immediately, or reheat at serving time at 375°F in a buttered baking dish.
