Masala TEA
A spiced Indian tea made with cardamom, clove, ginger, and Assam tea, simmered with almond milk and honey. Often enjoyed as a comforting remedy when feeling a cold coming on.

Gather these ingredients — no prep needed yet.
- 2 green cardamom pods
- 1 clove
- 6 fresh root ginger
- 1 tsp assam tea
- 8 5/11 tbsp almond milk
- 1 tbsp honey

Step 1.
Crack open 2 green cardamom pods and place them in a mortar with 1 clove. Peel a 6cm piece of fresh ginger and slice it into coins, then add to the mortar. Grind with a pestle into a coarse paste. Set aside.

Step 2.
Pour 150ml water into a small saucepan and bring to a boil over medium heat. Add the crushed spice paste, boil for 2 minutes, then reduce heat to low.

Add 1 teaspoon Assam tea leaves to the saucepan and simmer gently for 2–5 minutes, depending on desired strength. Stir occasionally.

Pour in 125ml almond milk and 1 tablespoon honey. Continue simmering for 2 minutes, stirring. Taste and add more honey if desired.

Strain the tea through a fine-mesh strainer into a mug, pressing on the solids to extract all liquid. Serve hot.
