  • 1/4 tsp ground cumin
  • 2 tbsp vegetable oil
  • 2 eggs
  • salt
  • 1 chapati
  • 1 tbsp Mowgli Chutney

Prepare

  • Grate 1 10/13 oz cheddar cheese
  • Chop 1 tsp fresh coriander
  • 0.25 red onion, finely sliced
  • 1 red chilli, deseeded and finely sliced

Let's Cook

  1. Step 1.

    Preheat your grill/broiler. In a small bowl, mix together the grated cheddar cheese, ground coriander, ground cumin, and chopped fresh coriander. Set aside.

  2. Step 2.

    Place 2 tablespoons of vegetable oil in a small non-stick frying pan over medium heat. When the oil is hot, add the finely sliced red onion and deseeded, finely sliced red chili. Fry for about 4 minutes, stirring occasionally, until the onion is soft and translucent.

  3. Step 3.

    While the onions are cooking, lightly whisk the 2 eggs with a fork in a small bowl. Once the onions are ready, pour the whisked eggs into the pan and quickly stir to combine with the onions. Season with a pinch of salt. Cook gently over medium-low heat until the eggs are just set, about 2–3 minutes.

  4. Step 4.

    Sprinkle the reserved cheese mixture evenly over the set eggs. Place the pan under the preheated grill/broiler and cook for 3–4 minutes, until the cheese is bubbling and golden brown.

  5. Step 5.

    While the omelette is under the grill, warm a chapati if desired. Spoon 1 tablespoon of Mowgli Chutney onto the chapati and spread it evenly. Once the omelette is done, carefully slide it out of the pan and onto the chutney-covered chapati. Roll the chapati tightly around the omelette, slice in half at an angle, and serve immediately.
