Lemon Herb Chicken Sheet Pan
A simple sheet pan dinner with lemon-herb marinated chicken and roasted vegetables. Perfect for a quick and flavorful weeknight meal.
Ingredients
- 2 lbs chicken breast cubed
- 2 tbsp olive oil
- 1 lemon juiced
- 1 tsp lemon zest
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dry oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- fresh cilantro or parsley chopped
- 1 1/2 lbs bag of baby red or yellow potatoes
- 1 zucchini sliced into coins
- 1 red bell pepper cut into strips
- 1 purple onion sliced
- 1/4 cup olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dry dill

- 1/4 cup olive oil

Prepare
- Cube 2 lbs chicken breast
- Juice 1 lemon
- Chop fresh cilantro or parsley
- 1 zucchini, sliced into coins
- 1 red bell pepper, cut into strips
- Slice 1 purple onion

Step 1.
Preheat the oven to 400°F.

Step 2.
Slice the baby potatoes into halves or quarters. Add them to a large parchment-lined sheet pan along with the sliced zucchini, bell pepper, and onion.

Toss the veggies with 1/4 cup of olive oil, 1 tsp each of paprika, garlic powder, salt, pepper, and dried dill until evenly coated.

Bake the veggies for 25 minutes.

While the veggies are in the oven, marinate the cubed chicken breast with 2 tbsp of olive oil and the same seasonings (paprika, garlic powder, salt, pepper, dried dill) in a bowl. Stir to coat and set aside.

After 25 minutes, remove the sheet pan from the oven. Flip the veggies using a spatula.

Add the marinated chicken cubes to the sheet pan, spreading them evenly among the veggies.

Return the pan to the oven and bake for another 15-18 minutes, until the chicken is cooked through and the veggies are tender.

Step 9.
Turn the oven to broil and broil the sheet pan contents for 2 minutes to get a slight char.

When serving, garnish with an extra squeeze of lemon juice.
