- 2 potatoes, peeled and shredded

Step 1.
Peel and shred 2 potatoes. Place the shredded potatoes in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible. Transfer the squeezed potatoes to a large bowl.

Add 2 teaspoons baking powder, 2 eggs, and 1 tablespoon salt to the bowl with the potatoes. Stir until all ingredients are evenly combined.

Heat about 1/4 inch of oil in a large skillet over medium-high heat. Once the oil is shimmering, form the potato mixture into pancakes about 3 to 4 inches wide and carefully place them in the hot oil. Fry for 3 to 4 minutes per side, until golden brown and crispy. Adjust heat if browning too quickly.

Transfer cooked latkes to a paper towel-lined plate to drain excess oil. Serve hot with applesauce or sour cream.
