Let's Cook

    Heat in a saucepan over medium heat: 2 tablespoons butter or vegetable oil

  2. Step 2.

    Add and cook, stirring, until softened but not browned: 1 shallot, minced

  3. Step 3.

    Stir in: 1 cup Israeli couscous

  4. Step 4.

    Cook, stirring, until lightly browned, about 3 minutes. Add: 1¾ cups chicken or vegetable broth or water; ½ teaspoon salt

  5. Step 5.

    Bring to a boil, then reduce the heat, cover, and simmer until the couscous is tender but still firm and the liquid is absorbed, 15 to 18 minutes.
