Hummingbird Bread

- 1 cup sugar
- 3 large eggs
- 3/4 cup whole milk

Prepare
- Soften 1/4 cup unsalted butter
- butter, for greasing
- 2 medium bananas, chopped into small pieces
- Drain 1/4 cup crushed pineapple

Step 1.
Preheat the oven to 350°F. Grease a standard loaf pan with butter.

In a medium mixing bowl, stir together 2½ cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon kosher salt. Set aside.

In a large mixing bowl, using a handheld mixer, cream ¼ cup (½ stick) softened unsalted butter and 1 cup sugar together until light and fluffy. Add 3 large eggs, one at a time, mixing on medium speed after each addition until the batter is creamy.

Alternate adding the flour mixture and ¾ cup whole milk to the butter mixture, mixing until fully incorporated. Stir in 2 teaspoons vanilla extract. Fold in 2 medium bananas (chopped into small pieces), ¼ cup drained crushed pineapple, and ¼ cup sweetened coconut flakes until well combined.

Pour the batter into the prepared loaf pan. Bake for 45 minutes to 1 hour, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely. Slice and serve cold, or toast and spread with butter.
