One 9-inch single-crust pie By simply varying the syrup in this pie, you can achieve a range of flavors.
Ingredients
- 1 ½ recipe Basic Pie or Pastry Dough (opens in new tab)
- ¾ cup maple syrup (235g), honey (250g), or sorghum syrup (255g)
- ½ cup (115g) heavy cream
- ½ cup (100g) sugar
- 5 tablespoons (70g) unsalted butter, melted
- 3 large eggs
- 1 tablespoon all-purpose flour or fine cornmeal
- ¼ teaspoon salt

Step 1.
Line a 9-inch pie pan with: ½ recipe Basic Pie or Pastry Dough

Bake as directed in About Blind Baking Crusts. Reduce the oven temperature to 350°F. Whisk together in a medium bowl: ¾ cup maple syrup (235g), honey (250g), or sorghum syrup (255g); ½ cup (115g) heavy cream; ½ cup (100g) sugar; 5 tablespoons (70g) unsalted butter, melted; 3 large eggs; 1 tablespoon all-purpose flour or fine cornmeal; ¼ teaspoon salt

Step 3.
Pour the filling into the crust. Bake until the center seems set but still quivers, like gelatin, when the pan is nudged, 45 to 55 minutes. Let cool completely on a rack.
