4 servings For an indoor alternative that does not require a grill pan, you may cook the bacon in a heavy skillet and brown the Treviso in the bacon fat over medium-high heat.

Ingredients

Servings:
  • 2 small heads Treviso, halved lengthwise, or 2 large heads radicchio, quartered through the stem
  • (4 slices bacon, cooked until crisp and crumbled)
  • 1
    • 2 tablespoons red wine vinegar
    • 1 tablespoon Dijon mustard
    • ¼ cup olive oil
    • 2 tablespoons minced cornichons
    • 1 tablespoon drained capers, minced
    • 2 teaspoons minced tarragon
    • 2 teaspoons minced parsley
    • (2 teaspoons minced chervil)
    • ¼ teaspoon black pepper
    Sub-recipe steps
    1. Whisk together in a medium bowl: 2 tablespoons red wine vinegar; 1 tablespoon Dijon mustard
    2. Gradually whisk in: ¼ cup olive oil
    3. Stir in: 1 Hard-Boiled Egg, minced or pressed through a fine-mesh sieve; 2 tablespoons minced cornichons; 1 tablespoon drained capers, minced; 2 teaspoons minced tarragon; 2 teaspoons minced parsley; (2 teaspoons minced chervil); ¼ teaspoon black pepper
    4. This sauce is best the day it’s made, but you may refrigerate it for up to 3 days.
  • 4 red radishes, thinly sliced
  • (Capers, drained)

Let's Prepare

Gather these ingredients - no prep needed yet.

  • 2 small heads Treviso, halved lengthwise, or 2 large heads radicchio, quartered through the stem
  • (4 slices bacon, cooked until crisp and crumbled)
  • 1 Sauce Gribiche
  • 4 red radishes, thinly sliced
  • (Capers, drained)

Let's Cook

  1. Step 1.

    Soak in cold water for 1 hour: 2 small heads Treviso, halved lengthwise, or 2 large heads radicchio, quartered through the stem

  2. Step 2.

    Have ready: (4 slices bacon, cooked until crisp and crumbled); Sauce Gribiche

  3. Step 3.

    Drain the Treviso well and shake off as much water as possible. Prepare a hot grill fire or heat a grill pan over medium heat. Add the Treviso or radicchio to the grill or pan and grill briefly, just until charred on the cut sides and slightly wilted. Divide among plates and top generously with the sauce, bacon, if using, and: 4 red radishes, thinly sliced; (Capers, drained)
