Let's Prepare

Collect

Gather these ingredients - no prep needed yet.

  • 8 oz tail-off shrimp, peeled
  • Olive oil
  • Kosher salt and pepper
  • 4 cup baby spring lettuce mix
  • 1/2 cup pecans
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tbsp raw honey
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Prepare

  • Wooden skewers, soaked in water 20 minutes, soaked
  • Slice 1 peach, pitted and sliced into wedges
  • Slice 1 red bell pepper, cored and sliced into strips
  • 2 oz goat cheese, crumbled, crumbled

Let's Cook

  1. Step 1.

    Heat a grill to medium.

  2. Step 2.

    Thread the shrimp onto wooden skewers.

  3. Step 3.

    Brush the shrimp with olive oil; sprinkle with salt and pepper.

  4. Step 4.

    Grill the shrimp, about 2 minutes per side, until shrimp is pink and cooked through; set aside.

  5. Step 5.

    Thread peach and pepper slices onto wooden skewers.

  6. Step 6.

    Grill 6 to 8 minutes total, or until peaches and peppers are slightly soft.

  7. Step 7.

    Remove the peaches and peppers from the skewers; set aside.

  8. Step 8.

    Prepare the dressing: In a small jar, whisk together the olive oil, balsamic vinegar, honey, salt and pepper.

  9. Step 9.

    Arrange the lettuce mix in 2 bowls or on 2 plates.

  10. Step 10.

    Arrange the red peppers and peaches on top of each salad.

  11. Step 11.

    Top with pecans, goat cheese and the shrimp skewers.

  12. Step 12.

    Drizzle the dressing over the salad.
