  • 6 tbsp olive oil
  • dry white wine
  • sea salt
  • freshly ground black pepper

Prepare

  • broad (fava) beans, shelled
  • cooking chorizo, skinned and diced
  • Dice tomatoes
  • Chop 1 tbsp flat-leaf parsley
  • 3 clove garlic, roughly chopped
  • fresh thyme, leaves stripped

Let's Cook

  1. Step 1.

    Wash the razor clams quickly under running water; do not soak them. Check that all clams are closed and shells are undamaged. If a shell is open, tap it gently; if it does not close, discard it.

  2. Step 2.

    Cook the broad beans in boiling salted water for 2 minutes, then drain in a colander and set aside.

  3. Step 3.

    Heat 4 tablespoons of olive oil in a frying pan over low heat. Add the diced chorizo and cook for 1–2 minutes.

    Add the cooked broad beans, diced tomatoes, and chopped parsley to the chorizo. Season lightly with salt and pepper, then remove from heat and set aside.

    Heat a griddle pan until very hot. Place the razor clams on the griddle, drizzle with a little olive oil, and cook for 2–3 minutes until the shells begin to open.

  6. Step 6.

    Sprinkle the chopped garlic and thyme leaves over the clams and cook for 30 seconds. Remove from heat and pour the white wine over the clams.

  7. Step 7.

    Spoon the chorizo mixture over the clams and drizzle with a little more olive oil. Serve piping hot with crusty bread and lemon wedges.
