Grilled Or Broiled Fruit Kebabs With Honey And Lime

Fruit skewers marinated in a honey-lime citrus glaze, then grilled or broiled until lightly caramelized. A refreshing dessert or side dish.
Ingredients
- ½ cup grapefruit juice
- Finely grated zest and juice of 1 lime
- ¼ cup honey
- 2 tablespoons orange liqueur or orange juice
- 2 medium-firm peaches, pitted and cut into 1-inch pieces
- 1 cup peeled and cubed pineapple
- 1 cup strawberries, hulled
- 1 banana, cut into 1-inch pieces
- 1 mango, peeled, pitted, and cut into chunks
- Chopped mint

Prepare a medium-hot grill fire, preheat a gas grill to medium-high, or preheat the broiler. If using wooden skewers, soak them in water for 30 minutes before using. Thread the fruit onto skewers. Grill or broil until lightly browned, about 5 minutes total, turning once and basting with the marinade. Serve sprinkled with: Chopped mint
