Gather these ingredients — no prep needed yet.

  • 2 artichokes
  • Freshly squeezed lemon juice
  • 2 tbsp extra-virgin olive oil
  • 1 tsp Sweet Rub
  • Basic Aioli
  • Dijon mustard
  • 1 tsp Sweet Rub

Prepare

  • 1 lemon, cut in half down the middle

Let's Cook

  1. Step 1.

    Prepare the grill for direct cooking over medium-high heat.

  2. Step 2.

    Using sharp scissors, cut off the thorny tips of the artichoke leaves. Cut each artichoke in half lengthwise. With a spoon, scoop out and discard the fuzzy choke and any dark inner leaves, leaving only the tender flesh. If desired, squeeze fresh lemon juice over the cut surfaces to prevent browning.

  3. Step 3.

    Steam the artichoke halves for 15 minutes, until fork-tender. Remove from steamer and set aside to cool slightly.

  4. Step 4.

    Coat the artichoke halves with 2 tablespoons extra-virgin olive oil, then sprinkle the cut sides with 1 teaspoon Sweet Rub.

  5. Step 5.

    Place the artichokes on the grill leaf side down and cook for 3 minutes. Flip to cut side down and grill for 6 to 8 minutes, until slightly charred and tender.

  6. Step 6.

    While the artichokes are grilling, place the lemon halves flesh side down on the grill and cook for 6 to 8 minutes, until caramelized. Remove and set aside.

  7. Step 7.

    Remove the artichokes from the grill. Squeeze the juice of one grilled lemon half into the Basic Aioli (see recipe) and stir to combine. Reserve the other grilled lemon half for squeezing over the artichokes at serving.

  8. Step 8.

    Serve the grilled artichokes with the Basic Aioli. If desired, stir in extra Dijon mustard and Sweet Rub to taste.
