Grapefruit HERB Sodas

- 1/2 cup granulated sugar
- fresh thyme, basil, or mint
- 1/2 cup freshly squeezed grapefruit juice
- 2 cup club soda

Step 1.
In a small saucepan, combine ½ cup granulated sugar with ½ cup water. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Remove from heat, add a few sprigs of fresh thyme, basil, or mint, cover, and let steep for 10 minutes. Remove the herbs and let the syrup cool completely.

Step 2.
Fill four 8-ounce glasses with ice. Pour ½ cup freshly squeezed grapefruit juice evenly over the ice in each glass. Stir in 1 to 2 tablespoons of the cooled herbed sugar syrup per glass, adjusting to taste. Top each glass with club soda and stir gently to combine. For an adult version, add a splash of gin, vodka, or light rum before topping with soda.
