Gather these ingredients - no prep needed yet.

  • 2 tbsp vegetable oil
  • 1/2 tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp sea salt
  • naan bread

Prepare

  • 1 large onion, finely chopped
  • 2.5 root ginger, peeled and cut into matchsticks
  • 2 tomatoes, finely chopped
  • 450 g cauliflower florets, cut into bite-sized pieces
  • 1 large handful coriander (cilantro) leaves, roughly chopped

Let's Cook

  1. Step 1.

    Heat the vegetable oil in a large frying pan or skillet over high heat. Add the finely chopped onion and stir-fry for 3–4 minutes until golden brown.

  2. Step 2.

    Add the ginger matchsticks and finely chopped tomatoes to the pan. Stir-fry for another 1 minute, allowing the tomatoes to soften slightly.

  3. Step 3.

    Add the cauliflower florets, chilli powder, garam masala, sea salt, and 100ml (about ⅓ cup) hot water. Mix everything well to coat the cauliflower with the spices.

  4. Step 4.

    Bring the mixture to a boil, then cover the pan, reduce the heat to low, and simmer for 20–25 minutes, until the cauliflower is tender but still has a slight bite. While the cauliflower simmers, you can prepare the naan bread or other accompaniments.

  5. Step 5.

    Once the cauliflower is cooked, stir in the roughly chopped coriander (cilantro) leaves. Mix well and serve immediately with naan bread.
