Gingery Pork Meatballs
Gingery pork meatballs served over rice noodles with a sesame dressing, fresh vegetables, and cilantro. The meatballs are air-fried for a quick and flavorful meal.
Ingredients
- 3/8 lbs rice noodles
- 1/2 cup Asian-style sesame dressing
- 1 large carrot shaved with a julienne peeler or cut into matchsticks
- 0.5 English cucumber shaved with a julienne peeler or cut into matchsticks
- 1 scallion thinly sliced
- 1 large egg
- 2 tsp lime zest grated
- 2 tbsp lime juice
- 1 1/2 tbsp honey
- 1 tsp fish sauce
- Kosher salt
- 1/2 cup panko breadcrumbs
- 1 clove garlic grated
- 2 scallions finely chopped
- 1 tbsp fresh ginger grated peeled
- 1 small jalapeño seeded and finely chopped
- 1 lb ground pork
- 1/4 cup fresh cilantro chopped

- 1/2 cup panko breadcrumbs
- 1 lb ground pork
Prepare
- 1 large carrot, shaved with a julienne peeler or cut into matchsticks
- 0.5 English cucumber, shaved with a julienne peeler or cut into matchsticks
- 1 scallion, thinly sliced
- Grate 2 tsp lime zest
- Grate 1 clove garlic
- 2 scallions, finely chopped
- 1 tbsp fresh ginger, grated peeled
- 1 small jalapeño, seeded and finely chopped
- Chop 1/4 cup fresh cilantro

Step 1.
Cook the rice noodles according to the package directions. Rinse under cold water to cool, drain well, and transfer to a large bowl. Toss with the Asian-style sesame dressing, shaved carrot, shaved cucumber, and sliced scallion; set aside.

In a large bowl, whisk together the egg, lime zest, lime juice, honey, fish sauce, and ½ teaspoon kosher salt. Stir in the panko breadcrumbs and let sit for 1 minute. Then stir in the grated garlic, finely chopped scallions, grated ginger, and finely chopped jalapeño. Add the ground pork and ¼ cup chopped cilantro, and mix until just combined. Shape the mixture into tablespoon-size balls.

Step 3.
Preheat the air fryer to 400°F. Working in batches if necessary (the meatballs can touch but should not be stacked), air fry the meatballs until browned and cooked through, 8 to 12 minutes, shaking the basket occasionally. While the meatballs cook, fold the remaining cilantro into the noodle mixture. Serve the noodles topped with the meatballs.
