A soothing ginger tea with honey, lemon, mint, and a hint of cayenne. Inspired by a Singaporean Indian friend, it's like a hot ginger-beer float and great for sore throats.

  • fresh mint
  • cayenne pepper

Prepare

  • 1/2 tbsp fresh root ginger, peeled and grated
  • Juice 0.25 lemon

Let's Cook

  1. Step 1.

    Add 250ml (9fl oz / 1 cup) water to a small saucepan set over medium heat and bring to a boil.

  2. Step 2.

    Add the peeled and grated ginger, honey, lemon juice, mint sprig, and cayenne pepper to the boiling water. Stir well, then remove the saucepan from the heat and cover with a lid. Let the tea steep for 10 minutes.

  3. Step 3.

    Strain the tea through a fine mesh strainer into a mug, discarding the solids. Serve immediately.
