A classic sandwich featuring deep-fried soft-shell crabs on toasted buns with a lemony mayonnaise, fresh tomato, and crisp lettuce.

Ingredients

    • Soft-shell crabs, cleaned
    • 2 inches vegetable oil
    • Salt and black pepper
    Sub-recipe steps
    1. Dry between paper towels: Soft-shell crabs, cleaned
    2. Dip them in: Bound Bread Crumb or Cracker Coating
    3. Heat to 365°F in a deep heavy pot or Dutch oven over medium-high heat: 2 inches vegetable oil
    4. Add the crabs a few at a time, without crowding, and fry until golden brown, 3 to 5 minutes, turning once. Drain on paper towels. Season to taste with: Salt and black pepper
    5. Serve with: Tartar Sauce, Rémoulade Sauce, or parsley and Brown Butter

  • 4 hamburger buns, split and toasted
  • ⅓ cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 medium tomato, thinly sliced
  • Boston, Bibb, or any lettuce leaves

  1. Step 1.

    Prepare: Deep-Fried Soft-Shell Crabs

  2. Step 2.

    Lay cut side up on a work surface: 4 hamburger buns, split and toasted

  3. Step 3.

    Combine: ⅓ cup mayonnaise; 1 tablespoon lemon juice

  4. Step 4.

    Spread the mixture on both halves of the buns. Divide among the bottom halves: 1 medium tomato, thinly sliced

  5. Step 5.

    Place the crabs on the bottom halves of the buns. Top with: Boston, Bibb, or any lettuce leaves

  6. Step 6.

    Cover with the top halves of the buns, press together gently, and serve.
