- ½ inch vegetable oil
- 1 pound okra
- 1 cup fine cornmeal
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon garlic powder or onion powder
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- ⅓ cup milk
- 1 large egg

Step 1.
Heat to 365°F in a large skillet: ½ inch vegetable oil

While the oil heats, wash, dry, trim off the stems, and slice into ½-inch pieces: 1 pound okra

In a medium bowl, combine: 1 cup fine cornmeal; 2 tablespoons all-purpose flour; 1 teaspoon salt; 1 teaspoon garlic powder or onion powder; ¼ teaspoon cayenne pepper; ¼ teaspoon black pepper

Set aside. Whisk together in a second medium bowl: ⅓ cup milk; 1 large egg

Toss the okra in the milk mixture, then in the cornmeal mixture. Add the okra to the hot oil in batches and fry, stirring occasionally, until browned, 4 to 6 minutes. Do not crowd the skillet and keep an eye on the temperature of the oil, adjusting the heat of the burner as needed. Remove the okra with a slotted spoon and drain on paper towels. Serve immediately.
