Prepare

  • 1 jalapeño, seeded, finely chopped
  • 0.25 small white onion, finely chopped
  • 1/2 lbs plum tomatoes, halved, seeded and chopped
  • Chop 1/4 cup fresh cilantro leaves
  • Tortilla chips, for serving

Let's Cook

  1. Step 1.

    In a large bowl, combine the finely chopped jalapeño (seeded if desired) and finely chopped ¼ small white onion. Add 1 tablespoon fresh lime juice, ¼ teaspoon salt, and ¼ teaspoon pepper. Toss to coat, then let sit for 10 minutes to mellow the flavors.

    After 10 minutes, add the halved, seeded, and chopped plum tomatoes to the bowl. Toss well to combine with the jalapeño-onion mixture.

  3. Step 3.

    Fold in the chopped fresh cilantro leaves until evenly distributed. Serve immediately with tortilla chips.
