Fresh Corn, Green Bean, AND Cherry Tomato Sauté
A quick and easy summer side dish featuring fresh corn, green beans, and cherry tomatoes sautéed with herbs and lemon butter. Perfect with grilled meats.
Ingredients
- 1 lb fresh green beans trimmed and halved crosswise
- 2 ears fresh white corn shucked
- 1 tbsp extra-virgin olive oil
- 2 cup sweet cherry tomatoes halved
- 2 tsp mixed fresh herbs finely chopped
- Kosher salt

- 0.5 medium lemon juiced
- 2 tbsp unsalted butter

- Kosher salt

- 2 tbsp unsalted butter
Prepare
- 1 lb fresh green beans, trimmed and halved crosswise
- 2 ears fresh white corn, shucked
- Halve 2 cup sweet cherry tomatoes
- 2 tsp mixed fresh herbs, finely chopped
- Juice 0.5 medium lemon

Step 1.
Fill a bowl with ice and cold water and set aside. Bring a medium saucepan filled halfway with salted water to a boil over high heat. Reduce the heat to medium and add the trimmed and halved green beans. Cook until just crisp-tender, about 4 minutes, then drain in a colander and transfer to the ice bath. Set aside.

Step 2.
Snap the ears of corn in half crosswise. Stand each half on the flat end and, using a sharp knife, cut down the side of the cob to remove the kernels.

In a deep skillet over medium-high heat, warm the olive oil. Add the corn kernels, halved cherry tomatoes, chopped fresh herbs, and a sprinkle of salt and pepper. Cook, stirring, until the corn is just barely tender, about 3 minutes.

Step 4.
Drain the blanched green beans and add them to the skillet with the corn mixture. Cook, stirring, until the mixture is warmed through, about 1-2 minutes.

Add the lemon juice and butter to the skillet and stir until the butter is melted and everything is well combined. Season with additional salt and pepper to taste. Serve hot or at room temperature.
