French Yogurt Cake

One 9 × 5-inch loaf; about 8 servings This super simple loaf cake is just the thing to make when you want a little something sweet. It also travels well. Preheat the oven to 350°F. Coat a 9 × 5-inch loaf pan with cooking spray and line the bottom and sides with parchment paper.

Ingredients

Servings:
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (200g) sugar
  • 3 large eggs
  • ½ cup (120g) whole-milk plain yogurt
  • ½ cup (105g) vegetable or mild olive oil
  • 1 ½ teaspoons vanilla
  • (Finely grated zest of 1 lemon or orange)
  • (1 tablespoon sugar)

    • ½ pound strawberries, hulled and quartered or sliced
    • ½ pound raspberries, blackberries, or pitted cherries
    • ½ pound peaches, apricots, plums, or mango, pitted and sliced or chopped
    • 1 to 2 tablespoons sugar, to taste
    • (1 to 2 tablespoons liquor, liqueur, or wine, to taste)
    • (Scraped seeds from a 1½-inch piece of vanilla bean)
    Sub-recipe steps
    1. Place one of the following in a medium bowl: ½ pound strawberries, hulled and quartered or sliced; ½ pound raspberries, blackberries, or pitted cherries; ½ pound peaches, apricots, plums, or mango, pitted and sliced or chopped
    2. Sprinkle over the fruit: 1 to 2 tablespoons sugar, to taste; (1 to 2 tablespoons liquor, liqueur, or wine, to taste); (Scraped seeds from a 1½-inch piece of vanilla bean)
    3. Allow the fruit to sit at room temperature, stirring occasionally, until it softens slightly and a light syrup collects in the bottom of the bowl, 30 to 45 minutes. Store refrigerated.

  • ½ teaspoon salt
  • 1 cup (200g) sugar
  • 3 large eggs
  • ½ cup (120g) whole-milk plain yogurt
  • ½ cup (105g) vegetable or mild olive oil
  • 1 ½ teaspoons vanilla
  • (Finely grated zest of 1 lemon or orange)
  • (1 tablespoon sugar)
  • 1 Cut-up fresh fruit or Macerated Fruit

Let's Cook

  1. Step 1.

    Whisk to combine in a medium bowl: 1 ½ cups (190g) all-purpose flour; 1 ½ teaspoons baking powder; ½ teaspoon salt

  2. Step 2.

    Whisk to combine in a large bowl: 1 cup (200g) sugar; 3 large eggs; ½ cup (120g) whole-milk plain yogurt; ½ cup (105g) vegetable or mild olive oil; 1 ½ teaspoons vanilla; (Finely grated zest of 1 lemon or orange)

  3. Step 3.

    Add the flour mixture to the wet ingredients and fold in until just combined. Scrape the batter into the prepared pan. If desired, for a frosted look, dust the top of the cake with: (1 tablespoon sugar)

  4. Step 4.

    Bake until a toothpick inserted into the center comes out clean, 50 to 55 minutes.

  5. Step 5.

    Let cool in the pan on a rack for 10 minutes. Invert the cake onto the rack, peel off the parchment paper, if used, and turn right side up to cool completely. Serve with: Cut-up fresh fruit or Macerated Fruit
