A flambéed fruit dessert featuring bananas, mangoes, peaches, and pineapple caramelized in butter and brown sugar, then finished with brandy or rum.

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 3 bananas, halved lengthwise
  • 3 mangoes, pitted and sliced
  • 3 peaches, pitted and sliced
  • Three ½-inch-thick slices pineapple
  • 2 ounces warmed brandy, dark rum, or liqueur

Gather these ingredients - no prep needed yet.

  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 3 bananas, halved lengthwise
  • 3 mangoes, pitted and sliced
  • 3 peaches, pitted and sliced
  • Three ½-inch-thick slices pineapple
  • 2 ounces warmed brandy, dark rum, or liqueur

Let's Cook

  1. Step 1.

    Melt in a large skillet over medium-low heat: 3 tablespoons butter

  2. Step 2.

    Add and stir until dissolved and bubbling thickly: 3 tablespoons brown sugar

  3. Step 3.

    Add 2 of the following: 3 bananas, halved lengthwise; 3 mangoes, pitted and sliced; 3 peaches, pitted and sliced; Three ½-inch-thick slices pineapple

  4. Step 4.

    Simmer until tender, basting occasionally and turning the fruit pieces to caramelize both sides. Add: 2 ounces warmed brandy, dark rum, or liqueur

  5. Step 5.

    Cover the skillet for about 30 seconds to heat everything through, then remove the lid, light the liquor with a long match or lighter, and let it flame until it extinguishes itself. If needed, cover the skillet with a lid to extinguish the flames. Serve immediately.
