A simple and elegant method for baking fish in parchment paper, keeping it moist and flavorful. The fish is seasoned and baked with butter or olive oil until tender.

- One 6- to 8-ounce fish fillet
- Salt and black pepper
- ½ tablespoon butter or olive oil

Step 1.
Preheat the oven to 425°F. For each serving, place on one side of a large square of parchment paper: One 6- to 8-ounce fish fillet

Sprinkle with: Salt and black pepper

Dot with: ½ tablespoon butter or olive oil

Fold the parchment paper over and pleat the edges so it stays closed. Bake until the paper is browned and puffed, about 15 minutes. Unwrap the packet and ensure the fish is firm and opaque throughout, or a thermometer registers 125° to 130°F, the latter temperature for flakier fish (for more on how to test for doneness, see here). Serve immediately.
