  • 1 cup crumbled feta or fresh goat cheese (4 ounces)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon minced fresh oregano or ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup milk

  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon minced fresh oregano or ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup milk

    Combine in a blender: 1 cup crumbled feta or fresh goat cheese (4 ounces); 2 tablespoons red wine vinegar; 2 tablespoons extra-virgin olive oil; 1 teaspoon minced fresh oregano or ½ teaspoon dried oregano; ¼ teaspoon salt; ¼ teaspoon black pepper

    Blend until smooth. With the machine running, add in a slow, steady stream, blending until smooth: ⅓ cup milk

  3. Step 3.

    If the dressing is too thick, add a little more milk as needed. Taste and adjust the seasonings. Use immediately, or cover and refrigerate for up to 5 days.
