Gather these ingredients — no prep needed yet.

  • 1/2 lbs russet or yellow potatoes
  • 1 1/2 tsp vegetable oil
  • Kosher salt and pepper
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 2 thin (⅜-inch-thick) boneless top sirloin steaks

Prepare

  • 0.25 small shallot, finely chopped
  • 1/2 tsp fresh tarragon, finely chopped

Let's Cook

  1. Step 1.

    Cut the potatoes into ¼-inch sticks; soak in water for 10 minutes. Drain and pat dry. Toss the potatoes with the oil and ¼ teaspoon each salt and pepper.

  2. Step 2.

    Heat the air fryer to 375°F. Place the potatoes in the air fryer basket and air fry for 15 minutes, shaking the basket twice during cooking.

  3. Step 3.

    While the potatoes are air frying, combine the mayonnaise, finely chopped shallot, lemon juice, 1 teaspoon water, tarragon, and ⅛ teaspoon pepper in a small bowl; set aside.

  4. Step 4.

    After the potatoes are done, raise the air fryer temperature to 400°F. Season the steaks with ¼ teaspoon each salt and pepper. Air fry the steaks to desired doneness, 6 minutes for medium-rare, turning halfway through. Transfer the steaks to a cutting board and let rest for 2 minutes.

  5. Step 5.

    While the steaks rest, place the potatoes back in the air fryer basket and air fry at 400°F for 2 minutes to warm. Serve the fries with the steak and mayo, and sprinkle with chopped tarragon.
