  • 1 tsp ground turmeric
  • 1/2 tsp chilli powder
  • 4 tsp ground coriander
  • 2 tsp garam masala
  • salt
  • Rotis
  • Puris

Prepare

  • 1 small onion, finely chopped
  • Chop 2 clove garlic
  • Chop fresh root ginger
  • Chop 3 tomatoes

Let's Cook

  1. Step 1.

    Wash, dry, and split the okra lengthways, cutting through the flesh about halfway so that one edge is still intact. Set aside.

  2. Step 2.

    Heat 3 tablespoons vegetable oil in a large pan over medium heat. Add the finely chopped onion and fry until golden brown, about 5–7 minutes, stirring occasionally.

  3. Step 3.

    Add the chopped garlic and ginger to the pan and fry for 1 minute until fragrant. Then sprinkle in 1 teaspoon ground turmeric, ½ teaspoon chilli powder, 4 teaspoons ground coriander, 2 teaspoons garam masala, and salt to taste. Cook for another minute, stirring constantly.

  4. Step 4.

    Drop the prepared okra into the pan and cook for 2–3 minutes, stirring to coat with the spices. The okra will release slime at this stage; continue cooking.

  5. Step 5.

    Add the chopped tomatoes to the pan and fry for 12–15 minutes, stirring occasionally, until the okra is soft and the mixture becomes fairly dry. The slime will disappear as the okra cooks.

  6. Step 6.

    Serve the spiced okra with rotis or puris.
