- 2 pounds fresh plum or Roma tomatoes, peeled, and chopped, or one 28-ounce can whole tomatoes

Prepare Amatriciana Sauce, or add 1 teaspoon red pepper flakes to Marinara Sauce or Tomato Sauce. Make 6 depressions in the sauce and proceed as for Shakshouka, topping the eggs with chopped parsley and (grated Parmesan or Romano). Serve with crusty bread.
