Egg, Sausage, And Potato Scramble
A hearty breakfast scramble with sausage, potatoes, and eggs, baked then skillet-cooked with onions and cheese. Garnished with tomatoes and green onions.

- 3 medium potatoes peeled and diced

- 1 lb ground breakfast sausage

- 1/2 cup shredded cheese of choice
Prepare
- 3 medium potatoes, peeled and diced
- Chop 0.5 medium yellow onion
- 3 green onions, chopped, plus more for garnish
- Beat 4 large eggs or 6 medium eggs
- Halve grape tomatoes

Step 1.
Preheat the oven to 350°F.

Place the diced potatoes in a 9x13-inch baking dish. Drizzle with olive oil, then sprinkle with seasoning salt, garlic powder, and pepper. Toss to coat evenly.

Bake the potatoes for 15 to 20 minutes, until fork-tender.

While the potatoes bake, heat a large deep skillet over medium heat. Add the ground breakfast sausage and cook, breaking it up with a spatula, for about 5 minutes until browned.

When the potatoes are tender, add them to the skillet with the sausage. Stir in the chopped yellow onion and green onions. Cook for 5 to 7 minutes, until the sausage is cooked through and the yellow onion is translucent.

Pour the beaten eggs over the mixture in the skillet. Stir continuously until the eggs are scrambled and well combined with the other ingredients. Sprinkle in ¼ cup of shredded cheese and stir to incorporate.

Once the eggs are cooked to your desired doneness, remove the scramble from the skillet. Garnish with halved grape tomatoes, the remaining ¼ cup cheese, and additional chopped green onions. Serve immediately.
