About sixty 1 ½-inch balls Without the characteristic hole, these are lighter in texture. If you dip the spoon into the frying oil before spooning up each gob of batter, the doughnuts will slide easily into the pot. Please read About Doughnuts.

Ingredients

    • 4 cups (500g) all-purpose flour
    • 4 teaspoons baking powder
    • ¾ teaspoon ground cinnamon
    • (¾ teaspoon grated or ground nutmeg)
    • ¾ teaspoon salt
    • 2 large eggs
    • 1 cup (200g) sugar
    • 1 cup (235g) milk
    • 5 tablespoons (70g) unsalted butter, melted
    • 1 teaspoon vanilla
    • 3 inches vegetable oil or shortening
    • Any icing or glaze
    Sub-recipe steps
    1. Whisk together in a medium bowl until thoroughly mixed: 4 cups (500g) all-purpose flour; 4 teaspoons baking powder; ¾ teaspoon ground cinnamon; (¾ teaspoon grated or ground nutmeg); ¾ teaspoon salt
    2. Beat well in a large bowl with an electric mixer: 2 large eggs
    3. Add slowly and beat until thick and creamy: 1 cup (200g) sugar
    4. On low speed, add and beat until blended: 1 cup (235g) milk; 5 tablespoons (70g) unsalted butter, melted; 1 teaspoon vanilla
    5. Mix the wet ingredients into the flour mixture with a spoon just until blended. The dough will be soft and sticky. Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours and up to 24 hours.
    6. Roll out the dough on a lightly floured surface to ½ inch thick and cut out the doughnuts. Let them rest, loosely covered with oiled plastic wrap, for 30 minutes.
    7. Heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven: 3 inches vegetable oil or shortening
    8. Fry in batches, flipping halfway through, until golden, about 4 minutes. Drain briefly on a baking sheet lined with paper towels, turning them to blot fat from the second side. While still warm, toss in a bowl with: Flavored Sugars

  • 3 inches vegetable oil or shortening
  • 1 Flavored Sugars

Let's Cook

  1. Step 1.

    Prepare the dough for either of the following, decreasing the flour by ½ cup: Cake Doughnuts or Chocolate Doughnuts

  2. Step 2.

    Do not refrigerate the dough. Cover it and set aside at room temperature for 30 minutes.

  3. Step 3.

    Heat to 375°F in a deep-fryer, deep heavy pot, or Dutch oven: 3 inches vegetable oil or shortening

  4. Step 4.

    Slide about 1 tablespoon dough for each doughnut into the fat, adding 5 or 6 at a time, and fry about 3 minutes. Drain briefly on a baking sheet lined with paper towels, then, while still warm, toss in a bowl with: Flavored Sugars
