- 8 ounces pitted prunes, dried apricots, dried figs, or dried dates, chopped
- 1 cup water, apple cider, or orange juice
- ¼ cup sugar
- Pinch of salt
- 2 tablespoons lemon juice
- (2 tablespoons Armagnac or Cognac)

Step 1.
Combine in a medium saucepan and bring to a boil: 8 ounces pitted prunes, dried apricots, dried figs, or dried dates, chopped; 1 cup water, apple cider, or orange juice; ¼ cup sugar; Pinch of salt

Step 2.
Reduce the heat and simmer until the fruit is very soft, 20 to 30 minutes. Some fruits are drier than others—add more liquid and cook a bit longer, if necessary. Stir in: 2 tablespoons lemon juice; (2 tablespoons Armagnac or Cognac)

Transfer to a blender or food processor and puree. Transfer to a bowl and cool before using.
