    In a large bowl, whisk together 2 cups flour, ½ cup sugar, ½ teaspoon salt, 4 teaspoons baking powder, ½ teaspoon cinnamon, and a little grated nutmeg.

    In a separate bowl, beat 1 egg, then add ½ cup milk and 2 teaspoons melted butter; whisk to combine.

    Pour the wet ingredients into the dry ingredients and stir just until a soft dough forms. Do not overmix.

    Turn the dough out onto a well-floured surface and knead lightly, about 5–6 times, until smooth.

    Roll the dough to about ¼-inch thickness. Use a doughnut cutter or two differently sized round cutters (or an upside-down cup and a smaller cutter) to cut out doughnuts. Gather the scraps, re-roll, and cut again, or roll into small balls.

    In a deep, heavy pot, heat at least 2 inches of oil (peanut, vegetable, shortening, or lard) to 350–375°F. To test, drop a 1-inch cube of bread into the oil; it should brown in about 1 minute. Adjust heat to maintain temperature.

    Fry the doughnuts and doughnut holes in batches, without crowding, until golden brown and crispy, about 1–2 minutes per side. Use a slotted spoon to turn them halfway through.

    Transfer fried doughnuts to a paper towel-lined plate to drain briefly, then move to a wire rack to cool completely. Repeat with remaining dough.
