  • 1 1/2 cup granulated sugar
  • 1 1/4 cup unsweetened cocoa powder
  • 1/2 tsp kosher salt
  • 1/2 tsp pure vanilla extract
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1 cup pecan halves
  • 3 tbsp turbinado sugar
  • 1 tbsp bourbon

Prepare

  • 3/4 cup unsalted butter, cut up

Let's Cook

  1. Step 1.

    Position a rack in the lower third of the oven and heat to 325°F. Line an 8-inch square baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides.

  2. Step 2.

    In a medium saucepan, melt butter on low heat. Add sugar, cocoa powder, and salt, and cook, stirring constantly, until combined, about 5 minutes.

  3. Step 3.

    Remove the saucepan from heat and stir in vanilla extract. Add eggs one at a time, stirring until each is fully incorporated. Fold in flour with a spatula until just combined. Transfer the brownie batter to the prepared pan and spread evenly.

  4. Step 4.

    In a small bowl, toss pecan halves with turbinado sugar and bourbon until coated. Sprinkle the pecan mixture evenly over the brownie batter. Bake until the brownies are set and a toothpick inserted 2 inches from the center comes out almost clean with a few moist crumbs attached, 50 to 55 minutes. Let cool completely in the pan on a wire rack. Use the parchment overhangs to lift the brownies onto a cutting board, then cut into 16 squares.
