Decorator’s Icing
A stiff icing made with meringue powder, perfect for decorating cookies. Tint with gel food coloring as desired.

- 3 tbsp meringue powder
- 1/3 cup warm water
- Gel food coloring

Step 1.
Using an electric mixer, beat confectioners' sugar, meringue powder, and warm water in a large bowl on medium speed until blended and the mixture is very stiff, about 5 minutes.

Tint the icing with gel food coloring as desired; press plastic wrap directly onto the surface of the icing to prevent it from drying out.

When ready to decorate, use a small spatula or piping bags fitted with small writing tips to ice cookies.
