Crown Roast Of Pork

12 to 15 servings Most butchers will prepare a crown roast for you from two loin racks, but make sure the loins used are of uniform size so that it cooks evenly.
Ingredients
- 1 Basic Bread Stuffing or Dressing (made with sausage and apples, if desired; see Additions to Bread Stuffing) (opens in new tab)
- 2 tablespoons vegetable or olive oil
- 4 teaspoons dried thyme
- 4 teaspoons ground allspice
- 2 teaspoons salt
- 1 teaspoon black pepper
- One 12-pound crown roast of pork
- ½ cup Madeira or dry white wine
- 1 ½ cups chicken stock or broth
- Kneaded Butter, made with 1 tablespoon butter and 1 tablespoon all-purpose flour

Step 1.
Prepare: Basic Bread Stuffing or Dressing (made with sausage and apples, if desired; see Additions to Bread Stuffing)

Preheat the oven to 350°F.

Mix together in a small bowl: 2 tablespoons vegetable or olive oil; 4 teaspoons dried thyme; 4 teaspoons ground allspice; 2 teaspoons salt; 1 teaspoon black pepper

Step 4.
Rub the mixture all over the surface of: One 12-pound crown roast of pork

Step 5.
Place in a roasting pan and roast for 1 hour.

Step 6.
Fill the center with the stuffing, placing any stuffing that will not fit in the roast in a separate buttered baking dish. Continue to roast until a thermometer inserted in the thickest part of the meat registers 145°F, 1 to 2 hours more (the temperature will rise 5 to 10 degrees as the roast rests). If the top of the stuffing starts to brown too much before the roast is done, cover just the stuffing with foil. Transfer the finished roast to a cutting board, cover loosely with foil, and let stand for 15 minutes. Place the roasting pan over 2 burners on medium-high heat and add to the pan: ½ cup Madeira or dry white wine

Bring to a simmer, scraping up the browned bits on the bottom of the pan. Strain into a saucepan and add: 1 ½ cups chicken stock or broth

Bring to a boil, then boil to concentrate the flavor if the juices taste thin and weak. To thicken the juices for gravy, reduce the heat and add to the simmering juices, whisking until smooth: Kneaded Butter, made with 1 tablespoon butter and 1 tablespoon all-purpose flour

Simmer to thicken and adjust the seasonings. Carve the roast into individual chops as shown and serve with the sauce and stuffing.
