Let's Cook

  1. Step 1.

    Preheat the air fryer to 200°C (400°F) or the oven to 220°C (425°F). Dice the potatoes into 2 cm cubes, toss with a little of the olive oil if desired, and air-fry for 15–20 minutes or roast on a baking tray for 25–30 minutes, shaking or turning halfway, until golden and crisp.

  2. Step 2.

    While the potatoes cook, heat the remaining olive oil in a large skillet over medium-high heat. Add the turkey mince and cook, breaking it up with a spoon, for 5–6 minutes until browned. Stir in the garlic, smoked paprika, and chilli to taste, and cook for 1 minute more until fragrant.

  3. Step 3.

    While the turkey browns, dice the onion, courgette, and peppers. Add them to the skillet with the turkey and cook for 5–7 minutes, stirring occasionally, until the vegetables are softened and the turkey is cooked through.

  4. Step 4.

    Fold the spinach into the skillet and cook for 1–2 minutes until wilted. Season with salt and pepper to taste.

  5. Step 5.

    Serve the turkey and vegetable mixture with the crispy potatoes on the side or folded in.
