- 1 jalapeño pepper, seeded and sliced
- 1/4 cup raw cashews, soaked in water for 30 minutes
- Mince 1 clove garlic

Step 1.
Preheat the oven to 425°F. In a medium bowl, toss the peeled and thinly sliced Yukon Gold potatoes with avocado oil, salt, and pepper until evenly coated.

Arrange the potatoes in a single layer on a baking sheet. Bake for about 30 minutes, flipping them halfway through, until they are golden brown and crispy.

In a blender, combine the cashews, water, nutritional yeast, lemon juice, minced garlic, and a pinch of salt. Blend on high for 1 to 2 minutes, scraping down the sides as needed, until smooth and creamy. Taste and adjust seasoning if desired.
