- 1 large egg
- 1 cup panko
- 1 tbsp olive oil
- Kosher salt and pepper
- 1 tbsp rice wine vinegar
- 1 tbsp fresh lime juice
- 1/2 tsp honey
Prepare
- 8 oz pork tenderloin, trimmed and cut into 4 pieces, then pounded to about ⅛ inch thick
- 1/2 tbsp fresh ginger, peeled and grated
- 0.25 small green cabbage, cored
- 1 scallion, thinly sliced on a diagonal
Let's Cook
-
Step 1.
Heat the oven to 450°F. Beat the egg in a shallow bowl. In a second bowl or pie plate, combine the panko and olive oil.
-
Step 2.
Dip each pork cutlet in the egg, letting any excess drip off, then coat in the panko mixture, pressing gently to help it adhere. Transfer the breaded cutlets to a rack set in a quarter sheet pan. Roast until golden brown and cooked through, 20 to 25 minutes. Sprinkle with ¼ teaspoon salt.
-
Step 3.
While the cutlets roast, whisk together the rice wine vinegar, fresh lime juice, grated fresh ginger, honey, and ¼ teaspoon each salt and pepper in a small bowl to make the vinaigrette.
-
Step 4.
Using a mandoline, thinly shave the green cabbage. Toss the shaved cabbage with the vinaigrette, then toss with the sliced scallion. Serve the cabbage salad alongside the roasted pork cutlets.
