Crispy Baked Apple Chips

- 3 medium tart apples

Step 1.
Preheat the oven to 200 degrees F. Line three baking sheets with parchment paper and evenly space three racks in the oven.

Core the apples vertically so you can see all the way through their centers and no seeds remain. Using a mandoline, slice the apples into ⅛-inch-thick rounds. (Alternatively, cut the apples in half vertically, core them, then cut into ⅛-inch-thick half-moons with a knife.)

Spread the slices from each apple onto one of the prepared baking sheets, arranging them in four rows and allowing them to overlap slightly as needed—they will shrink during cooking and will all fit without touching eventually.

Bake for 1 hour. Then gently separate the slices as much as you can, rotate the pans, and bake for another hour.

Rotate and separate again, flip the slices over, and bake as long as needed until they become crisp, another 30 to 60 minutes. The water content of apples varies, so baking time depends on the apple type and slice thickness.

Step 6.
To test the chips, remove a slice from each sheet and set aside to cool for about 2 minutes. If they are crisp, they are done. Let the chips cool to room temperature on the baking sheets, then serve or store in a sealed container for up to 5 days.
