Prepare
- Slice 1 large sweet onion
- Mince 3 clove garlic
- Chop 1 cup fresh cilantro

Step 1.
In a small bowl, stir together the cowboy rub, dark brown sugar, smoked paprika, ground cumin, and 1½ teaspoons kosher salt until evenly combined.

Trim the fat from the 6-pound flat-cut beef brisket, leaving a thin layer of fat, then cut the brisket into 3-inch chunks. Rub the brisket pieces evenly with the spice mixture, coating all sides.

Lightly grease a 5- to 6-quart slow cooker with olive oil. Add the sliced sweet onion and minced garlic to the bottom of the slow cooker. Arrange the seasoned brisket pieces on top of the onion and garlic, then sprinkle with the chopped fresh cilantro.

Cover the slow cooker and cook on low for 8 to 9 hours, until the brisket is tender and shreds easily with a fork. During the last 30 minutes of cooking, warm tortillas for serving.

Remove the meat from the slow cooker and drizzle with a small amount of the cooking liquid. Shred the brisket with two forks if desired.
