Prepare

  • Halve 1/3 lbs cherry tomatoes
  • Chop 3 tbsp fresh mint leaves
  • Juice 2 limes
  • Crush 0.5 clove garlic

Let's Cook

    Using a ribbon peeler, slice the courgettes into fine ribbons and place them in a large serving bowl. Add the halved cherry tomatoes to the bowl and set aside while you prepare the dressing.
