Let's Cook

  1. Step 1.

In a mixing bowl, combine the sugar, shortening, and cocoa. Stir them together with a spoon or spatula until evenly blended and no dry cocoa remains, then scrape the mixture into a saucepan.

  2. Step 2.

Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to prevent sticking. Once boiling, reduce the heat to a simmer and cook, stirring frequently, until a candy thermometer reads 275°F (135°C); this may take several minutes, so keep a close eye on the temperature.

  3. Step 3.

Remove the saucepan from the heat and let the mixture cool undisturbed for about 10 minutes, until it is warm but no longer scalding. While it cools, lightly grease a cookie sheet with shortening or nonstick spray and set it near your work area.

  4. Step 4.

Add the evaporated milk and vanilla to the cooled mixture and stir briefly to combine. Using an electric mixer, beat the mixture on medium-high speed until it becomes very thick and loses its glossy sheen, scraping down the sides of the pan as needed.

  5. Step 5.

Scrape the thickened candy onto the prepared cookie sheet, spreading it into an even layer if desired. Let it cool completely at room temperature until firm and no longer warm to the touch.

  6. Step 6.

Once the candy is fully cool, mold or cut it into pieces of your desired size and shape, using lightly greased hands or a knife if it sticks.
