Let's Cook

  1. Step 1.

Husk the tomatillos and cut them in half. Stem the peppers and cut them in half as well.

  2. Step 2.

In a pot, combine the tomatillos and peppers with the chicken broth. Bring to a boil over high heat, then reduce to a simmer and cook for 10 minutes, until the tomatillos and peppers are softened. Strain the mixture, reserving the broth in a bowl.

  3. Step 3.

While the tomatillos and peppers are boiling, prepare the remaining ingredients: measure out the remaining ingredients (except the oil) and have them ready. After straining, transfer the cooked tomatillos and peppers to a blender along with the remaining ingredients (except the oil). Blend until almost smooth, scraping down the sides as needed.

  4. Step 4.

Heat the oil in a frying pan over high heat until very hot (it should shimmer but not smoke). Carefully add the tomatillo mixture (it may splatter) and cook for 4-5 minutes, stirring constantly, until the mixture darkens in color and becomes thick.

  5. Step 5.

Pour the reserved broth into the pan with the thickened tomatillo mixture and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the sauce thickens again, about 10 minutes. Taste and adjust seasoning if desired.
