Let's Cook

  1. Step 1.

Set up a double boiler by placing a heatproof bowl over a saucepan with a couple inches of simmering water, making sure the bowl's bottom doesn't touch the water. Add the milk and caramels to the bowl and heat over medium-low, stirring frequently, until the caramels melt completely and the mixture becomes a hot, smooth cream, about 5 to 10 minutes.

  2. Step 2.

While the caramel mixture heats, chop the chocolate into small, even pieces so it melts quickly and evenly. Add the chopped chocolate to the hot caramel cream and stir continuously until the chocolate is fully melted and the mixture is uniform and glossy.

  3. Step 3.

Mix in the softened ice cream and the vanilla extract, stirring until the mixture is completely smooth with no streaks of ice cream remaining. If making the variation, use 1/3 cup very strong coffee in place of the whole milk, adding it with the caramels in the first step.
